Want to learn how to make the iconic Chicago Italian Beef with a flavorful Filipino twist?​ ​ Backed by his Amex® Gold Card, Food Creator Matt Broussard (@ACookNamedMatt) visits chefs Genie Kwon and Tim Flores at Kasama in Chicago to learn the recipe for their famous Kasama combo. He then shows you how to recreate it in your own kitchen. ​ ​ Here’s the recipe:​ 1️⃣ Pork Adobo: In an oven-safe pot, sear 5 lb pork shoulder on each side. Toast 1 Tbsp. whole black pepper, 1 Tbsp. fennel seeds, and 1 Tbsp. red pepper flakes until bloomed, then add spices to a sachet and place in pot. Add 2 cups soy sauce, 2 cups white vinegar, 1 QT water and 2 heads of chopped garlic to pot. Place pot in oven and roast at 325 F until 74c/165 F (about 2 hours). Remove pork from liquid and let cool, reserving the liquid.​​ ​ 2️⃣ Sausage: Fry sausage of your choosing until cooked through. Kasama uses homemade Longanisa, and Matt used Chorizo (cut open Seattle-style).​​ ​ 3️⃣ To Serve: Assemble sandwich on French bread with sausage, shaved pork dipped in jus, and topped with spicy giardiniera. Serve with side of jus for dipping.
